A perfect Sunday morning. Kids playing quietly by the sunny dining room window. Soft jazz playing in the kitchen. Earl Grey steeping. And these-
Banana Walnut Waffles. Haven’t used the waffle iron in quite some time. Poor thing has been neglected. Not sure why, when the results are this delicious.
Banana Walnut Waffles
adapted from Veganomicon, Isa Moskowitz and Terry Hope Romero
1 1/4 cups almond milk (or soy/rice milk)
1/4 water
2 t cider vinegar
2 bananas, plus slices extra for serving
3 T canola oil
3 T maple syrup
1 t vanilla
1 cup all-purpose flour
1 cup whole wheat flour
1/4 cup ground flax seeds
1 t baking powder
1 t baking soda
1/2 t salt
1/4 t nutmeg
1 cup walnuts, finely chopped plus 1/2 cup chopped for serving
Preheat waffle iron. Combine almond milk, water and vinegar in a small bowl and set aside for a few minutes. Mash the bananas in a large bowl. Add almond milk mixture, oil, maple syrup and vanilla and stir. Add flours/flax, baking powder, soda, salt, nutmeg. Combine without over mixing. Fold in walnuts.
Spray surface of waffle iron and pour a ladle full of batter on and cook until done. Served with sliced bananas, chopped walnuts and syrup.
